Elizabeth Pedersen

Elizabeth Pedersen, 86 of Old Bridge, New Jersey passed away on Thursday, October 29, 2020, at home, surrounded by her loving family. Born Monday, April 2, 1934 in Brooklyn, New York, Elizabeth was one of eight children born to George and Maria Apelskog. Elizabeth was raised in the Bay Ridge section of Brooklyn. She graduated from high school with a knowledge of Fashion and Design. Elizabeth would go on to work in New York City's fashion district for a number of years, before starting a family of her own. Elizabeth married Robert Pedersen and the couple would start their own family in Brooklyn. It was in the mid 1960's the family would relocate to the Lakeridge section of Old Bridge. They were one of the original families in the community. Elizabeth was instrumental in having a bus route to New York City on route 516. She hosted NJ Transit meetings in the family living room. After her children had grown Elizabeth began working as a seamstress at home. She loved sewing and quilting. Elizabeth also had a green thumb in the garden, and enjoyed cooking meals for family gatherings. When she wasn't on the go, Elizabeth enjoyed completing Word Searches. Elizabeth was a member of the Sons of Norway, the Molly Pitcher Stitchers, the St. Gabriel's senior group, and the Good Shepherd Lutheran Church. She was a loving woman who will be missed by all those that were blessed to have her in their lives. Elizabeth was predeceased by her beloved husband of 37 years, Robert, and by her loving son, Robert, by her loving parents, George and Maria Apelskog, and by her siblings. Elizabeth is survived by her loving daughter, Wendy Callahan, and husband Jay, by her loving daughter in law, Nancy Pedersen, by her caring sister Diana Johnson, by her cherished grandchildren, Naomi Stout, Sarah Stout, Margaret Pedersen and Robert Pedersen, and by her adoring great granddaughter Avery Stout. A Funeral service will be at 11:00 AM on Tuesday at Good Shepherd Lutheran Church located at 3139 County Road 516 Old Bridge, New Jersey 08857. Interment will be in Cloverleaf Memorial Park, Woodbridge, NJ. The family will receive friends from 2:00 PM to 4:00 PM and 7:00 PM to 9:00 PM on Monday, November 2, 2020, at Michael Hegarty & John Vincent Scalia Home For Funerals and Cremation Service, 3377 US Highway 9, Old Bridge, New Jersey.
